Sunday Fitness & Food Link-Up: Spring Mix with Berries & Balsamic Vinaigrette

Spring Mix with Berries & Balsamic Vinaigrette

As much as I love winter, it can be a bit long here in Maine. I do love cooking various soups & stews, but this week I found myself longing for Summer. We had a fluke warm day here (50 degrees) on Thursday, so my husband fired up the grill. He made some delicious salmon burgers and I made one of my favorite summer time salads: Spring Mix with Berries & Balsamic Vinaigrette.

Sunday Fitness & Food Link-Up: Penne Pasta with Chicken Sausage & Veggies

We had a wonderful family vacation last week, but getting back in the swing of things has been a bit rough!  The week is packed with work, training, the kid's sports activities, and meetings.  Not to mention, getting caught up with laundry and house hold chores from being gone.  So, I decided to make a simple pasta dish that I created, which is a favorite here!  I always make enough of this for 2 meals, as it is an easy meal to freeze and pull out to heat up on a busy night.

Sunday Fitness & Food Link-Up: Minestrone & Quesadillas

Welcome to the Sunday Fitness & Food Link-Up!  Today I am sharing another family favorite that I have posted in the past. It is a Quick & Easy Minestrone. I serve it with quesadillas on the side, which makes a hearty, delicious, and nutritious complete meal. It is also a great dinner to serve up if you participate in "Meatless Monday's" as it can be vegetarian.

Sunday Fitness & Food Link: Onion & Garlic Soup with Toasted Baguette

Welcome to the Sunday Fitness and Food Link-up! Today I am sharing a favorite winter recipe: Onion & Roasted Garlic Soup. It is a twist on the classic French Onion soup, with the addition of port wine and roasted garlic, which gives it a uniquely delicious flavor. It is served with toasted baguette slices with melted swiss cheese, which makes it a hearty stand alone dish or can be served as a first course.
