This week I am sharing one of my favorite Spinach dishes. I love this recipe because it is quick, easy, healthy & delicious! It is versatile and can be used as a side dish, vegetarian main dish, or serve as a bed for protein, such as meat or seafood. I recently made Seared Sea Scallops and placed them on top of the Spinach Sauté.
Here is what you will need:
-1 Tbsp Coconut Oil
-1 Tbsp of Butter
-1/2 White Onion, chopped
-5 Cloves of Garlic, coarsely minced
-8 oz. Shitake Mushrooms
-8 Cups of Baby Spinach Leaves
-1 Pint of Grape Tomatoes (or Cherry Tomatoes) cut in half
1. Heat Coconut Oil in large pan over Medium Heat until melted.
2. Add Onions & Garlic, cook until softened, approximately 5 minutes.
3. Add 1 Tbsp of butter and Shitakes, sauté until softened, approximately 5 minutes.

5. Uncover and add tomatoes, sauté for 1 minute & remove from heat.
6. Serve warm!

ReplyDeleteI love fresh spinach sautés. Haven't tried one with tomatoes yet, will have to soon. I like them combined with farro or whole wheat pasta.

DeleteSpinach is seriously my best friend. I feel like something is missing if I don't have it in my fridge! I actually eat it out of the bag with my hand (like one might chips) and squirt sugar-free ketchup on it! BAH HA AH!! TRUTH!
