Spinach Saute




This week I am sharing one of my favorite Spinach dishes. I love this recipe because it is quick, easy, healthy & delicious! It is versatile and can be used as a side dish, vegetarian main dish, or serve as a bed for protein, such as meat or seafood. I recently made Seared Sea Scallops and placed them on top of the Spinach Sauté.

We have had a glimpse of Spring here in Maine with some mild weather over the past 2 weeks. I love this time of year when everything begins to thaw out and I know it won't be long until the tulips pop up! As much as I love winter, it can be a bit long here in Maine. I do love cooking various soups & stews, but this week I found myself longing for Summer. We had a fluke warm day here (50 degrees) on Thursday, so my husband fired up the grill. He made some delicious salmon burgers and I made one of my favorite summer time salads: Spring Mix with Berries & Balsamic Vinaigrette.

We had a wonderful family vacation last week, but getting back in the swing of things has been a bit rough!  The week is packed with work, training, the kid's sports activities, and meetings.  Not to mention, getting caught up with laundry and house hold chores from being gone.  So, I decided to make a simple pasta dish that I created, which is a favorite here!  I always make enough of this for 2 meals, as it is an easy meal to freeze and pull out to heat up on a busy night.

26.2 Miles at Walt Disney World


It's been a little over a week since I finished my marathon at the most magical place on Earth. It was my 5th stand alone marathon & my 3rd one at Disney. I decided to do the race in mid- September, as what you might call a "Consolation Race" post Ironman Mont Tremblant.  If you have been following my blog, you already know that it was a colorful experience leading up to the race & the event itself did not disappoint. "If something can go wrong, it will go wrong" became my motto. Despite finishing, I was left feeling pretty gloomy about how the day unfolded. It did not resemble anything I had worked for or envisioned.  I now call it my Post Ironman Depression (PIMD). I know many people go through this after a big event, even when things have gone their way.  I'm a Nurse, so decided to treat my own wounds and I felt the best cure for my PIMD was to sign up for another race STAT!
