Sunday Fitness & Food Link-Up: Gluten-Free Pasta Primavera


We have had a glimpse of Spring here in Maine with some mild weather over the past 2 weeks. I love this time of year when everything begins to thaw out and I know it won't be long until the tulips pop up! Looking forward to longer days and planning my garden made me think of a quick & easy Pasta Primavera dish. "Primavera" which means "Spring" is a traditional Italian dish. The entire family loves this fresh & colorful main course.


Here is what you will need:
-12 ounces of Gluten Free Pasta of your choice 
-1 Bunch of Asparagus, cut into 1 inch pieces
-1 Cup of Frozen Peas
-1/2 of Red Onion, finely chopped
-1 Shallot, finely chopped
-1/2 of Red Bell Pepper, chopped
-1/2 of Orange Bell Pepper, chopped
-3 Cloves of Garlic, finely chopped
-1 Cup of Shitake Mushrooms, cleaned & rinsed
-1 Cup of Baby Spinach
-1 Tbsp + 1 tsp of Extra Virgin Olive Oil
-1 Cup of Cherry Tomatoes
-1 Cup of Chicken Broth
-1/2 Cup of Heavy Cream
-1/2 Cup of Shredded Fresh Parmesean Cheese
-1/2 Cup of Chopped Basil Leaves
-Coarse Sea Salt & Fresh Ground Black Pepper to taste

Diretions:

1. Boil Pasta according to directions on package. (I use the Jovial Gluten Free Brown Rice Egg Tagliatelle, however this goes well with any pasta, so choose your favorite!)

2. During the Last 2 minutes of boiling the pasta, Add the Asaparagus & Peas.

3. Drain Pasta & Rinse the Pasta, Asparagus, & Peas and put back in pot and keep warm.

4. Heat 1 Tbsp of Olive Oil in Pan over Medium Heat

5. Add Bell Peppers, Onion, & Shallot, sauté for approximately 5 minutes or until tender.


6. Add Garlic & sauté for 1 minute.

7. Add Shitake Mushrooms, Spinach, & 1 tsp of Olive Oil, Sauté approximately 3 minutes or until tender.

8. Add Cherry Tomatoes and sauté for 1 minute.

9. Stir in Chicken Broth & remove from heat.

10.  Add Heavy Cream slowly while gently stirring, place back over low heat for 2 to 3 minutes.

11. Add the Veggie & Cream Mixture to Pasta Mixture & Toss gently.

12. Serve warm with Parmesan Cheese & Fresh Basil sprinkled on top.

  8. Sounds yummy but I'd have to switch it up a bit, as I don't like peas & asparagus and my husband doesn't like Parmesan.

    1. Thank you! Most grocery stores in the US sell varieties of gluten free, sometimes the pasta is made with rice, quinoa, or other grains. This particular one is made with brown rice. Thank you for linking up, have a Great Week :-)
