Friday Five: Favorite Dishes



I am participating in the Trifecta Friday Five link-up hosted by Cynthia at You Signed Up for What, Courtney at Eat, Pray, Run DC, and Mar at Mar on the Run.  This week's theme is Food & Drinks, so I am sharing 5 of my favorite recipes. 

Here are my 5 Favorites:




1.  Roasted Broccoli & Sweet Potatoes in Coconut Oil- This side dish is one of my kid's favorites and is quick, easy, nutritious, & compliments almost any protein main course. The coconut oil enhances the sweetness of the potatoes and roasting the broccoli gives it a nutty flavor. Click Here for Recipe.






2. Penne Pasta with Chicken Sausage, Bell Peppers, Mushrooms, & Sweet Peas- This is a great weeknight main dish recipe and it freezes well, so I usually make a double batch of it! The pasta and chicken sausage are a hit with the little ones & I also sneak in lots of veggies. It is hearty enough to serve as a one dish meal, check out the Recipe Here.






3. "Not Your Nana's Brussel Sprouts" - People seem to either love or hate Brussel Sprouts. My husband hated them because he thought of them as boiled and mushy. I convinced him to give my version a try and he was quite surprised at how delicious Brussel Sprouts can be if cooked properly. In fact, this dish is even one of my 6 year old daughter's favorites.  Roasting the sprouts give them a nutty flavor & carmelized texture. 4.  Spinach & Sauteed Veggie Casserole- I love this recipe because it is simple and a great way to use up extra veggies in the freezer. Of course the kids love it with the cheese on top, which can be done sparingly, unlike what is pictured above! :-) This is a wonderful side dish or could be a vegetarian main dish. 5.  Minestrone- Minestrone is a quick, easy, healthy, & low fat meal that my entire family (even my picky 9 year old son enjoys! I serve it with homemade quesadillas on the side, which can be prepared while the soup is simmering. It is also a great option for "Meatless Mondays".   1. I made Brussels sprouts this week as a side dish and my husband saw me chopping them and told me how much he loves them...which is good since they're one of my favorites! I learned something really interesting before I tried them from another blogger...there's this chemical that is released if you overcook them and that's where that pungent odor comes from. #TheMoreYouKnow! :) I have never thought to mix broccoli and sweet potatoes so I'll have to give that a whirl! -C

  2. Isn't roasting just the best for veggies?! I can't believe how much more I like broccoli when it's roasted. I too love coconut oil for just about everything these days.Wait...you make homemade tortillas? THAT is something I need to try. I just learned last year, I know - late bloomer, how to make homemade refried beans and we love them! I can imagine how my fam would flip if I had homemade torts as well! Your minestrone looks good. I have to admit, I am not sure I've ever tried a Brussel sprout. Thanks for all the great ideas! Have a great day!

  6. I love Brussel sprouts we just had them last night for dinner. I love them for their high Vitamin C, they're so good for you. you are so right, when cooked properly they are absolutely delicious:)

  7. I'm impressed that your kids eat all of those. My picky people are not fans of combined foods - they'll eat most of the ingredients, just in separate piles on plates LOL. And my husband hates the smell of roasting brussels sprouts so I only make them when he's not working from home (but I love them and could eat them every single day.)

  9. oh that broccoli and sweet potato combo looks amazing! i might have to try it out on sunday; i've been searching for a good side for my valentine's day meal :)
